photo 172a When the dough goes through this chain-like structure it slows the dough down, but the conveyor belt is still moving fast and that causes the dough to roll up. As it moves to the right the shape of the dough starts to look more like a loaf of bread.
photo 172b Finally it comes out of the sheeter-moulder looking like this. This dough is ready to be put into pans.
